Naturally-Sweetened Apple Pie Filling (Plus, 5 Great Ways to Use It!)

With Thanksgiving just around the corner โ€“ and an abundance of fresh fall apples available across the country โ€“ I thought it would be perfect timing to share a traditional fall favorite apple recipe!

This simple, yet delicious naturally-sweetened apple pie filling is made using pure maple syrup and just a hint of vanilla. Of course, we love using this cinnamon-apple filling for making yummy gluten-free Thanksgiving pies, but, we also enjoy using this classic fall favorite to create lots of other tasty treats too! (See 5 great ideas below.)

Naturally-Sweetened Apple Pie Filling (GF, DF)

6 large apples (honeycrisp and pink lady are my personal favorites) 
2 Tbsp fresh-squeezed lemon juice
1 1/2 cups water
1/2 cup pure maple syrup
3 Tbsp arrowroot powder (or organic cornstarch)
1 tsp pure vanilla extract
1 tsp ground cinnamon
1/4 tsp ground nutmeg
1/4 tsp sea salt

1. Peel and core apples. Then, either slice the apples, or cut them into bite-sized cubes. Place in large bowl and toss with lemon juice. Cover and set aside.
2. In a large saucepan, whisk together remaining ingredients (water, maple syrup, arrowroot powder, vanilla extract, spices and salt), until well combined.  Place on medium-high heat and bring to a simmer, while whisking constantly until the filling begins to thicken (about 2-3 minutes).
3. Add the diced apples (or apple slices) and continue to gently simmer. Cook apples about 10 minutes until desired softness is reached. (If using the filling for a pie, cook apples just until they begin to soften.)
4. Remove pan from heat and allow to cool to room temperature. Then, transfer to mason jars. Makes one quart, plus one cup of apple pie filling. Store in refrigerator for up to two weeks. (Or you can preserve the filling longer using the classic hot water bath canning method.)
