Turkey, Cranberry & Apple Salad
When it comes to Thanksgiving, leftover turkey is definitely a blessing! There are so many ways to transform leftover roasted turkey, or roast chicken into easy healthy meals like this simple and scrumptious turkey salad!
I love using homemade Greek yogurt combined with fresh apples, grapes and dried cranberries because it not only gives this turkey salad a creamy tang, but also a healthy dose of probiotics in every delicious bite!

Turkey, Apple & Cranberry Salad
3 cups diced leftover roast turkey (or roast chicken)
1 cup diced organic apple
1/2 cup diced grapes
1/4 cup diced celery
1/4 cup diced dried cranberries
1/4 cup plain Greek yogurt (or mayo)
1 tsp fresh-squeezed lemon juice
1/8 tsp dried tarragon
Sea salt and pepper, to taste
1. In a medium-size mixing bowl, add turkey, apple, grapes, celery and dried cranberries. Set aside.
2. In a small bowl, whisk together the yogurt (or mayo), lemon juice, tarragon, and sea salt and pepper to taste.
3. Add the yogurt mixture to the turkey mixture. Use a spoon to mix and incorporate all ingredients together.
4. Serve on a bed of salad greens with a side of garden herb biscuits or your favorite fresh baked rolls.
