Easy Oven Baked BBQ Spiced Chicken

It may be Winter, but we can still enjoy the fun flavors of a summertime barbecue with this easy and tasty Oven Baked BBQ Spice Chicken. It’s not only delicious, it’s fast and frugal too!

Another plus … this dish easily transforms into a one-pan meal with the simple addition of your favorite root vegetables. Add some sautéed greens, or a big salad, and you’ve got a healthy meal with minimal fuss and lots of flavor!

Oven Baked BBQ Spice Chicken

Serves 4-5 • Recipe courtesy of The Nourishing Home

For the BBQ Spice Mix
2 tsp chili powder
1 tsp smoked paprika
1 tsp garlic powder
1 tsp onion powder
1 tsp thyme
1 tsp sea salt
1/2 tsp cumin
1/2 tsp ground ginger

For the chicken
12 chicken drumsticks
2 Tbsp melted butter (or ghee)

1. Preheat oven to 425°F. Line a large rimmed baking sheet with parchment paper. In a small bowl, combine BBQ Spice Mix ingredients mixing well to combine.

2. Pat chicken dry and place on lined baking sheet. Lightly brush each drumstick with melted butter or ghee.

3. Hold each drumstick over a small bowl and generously sprinkle all sides with the BBQ spice mixture. (Holding the drumsticks over a bowl allows you to catch the extra spice mix so you can use it to coat all of the drumsticks. Be sure to discard any leftover spice mix once all of the drumsticks are coated.)

4. Place drumsticks on lined baking sheet. Bake at 425°F for 25 minutes. Then reduce oven temperature to 350°F and continue baking for 15-20 minutes until chicken is done. An easy test for doneness is if the juices run clear when poked with a fork.

5. Serve with a side of Roasted Herb Potatoes (see note below), Homemade BBQ Sauce and Sautéed Greens or mixed greens salad. Enjoy!

Recipe Variation: If you’d like to make it a one-pan meal, use a large rimmed baking sheet lined with parchment paper. Place the chicken drumsticks on one half of the pan (spaced at least one-inch apart). Prepare the Herb Potatoes according to the recipe. Place the seasoned potato pieces on the other half of the pan. Bake at 425°F for 25 minutes until potatoes begin to brown. Use a spatula to remove the potatoes from the pan; transfer to a serving bowl and cover to keep warm. Reduce oven temperature to 350°F and continue to bake chicken another 15-20 minutes until done. So easy and delicious!
